Ingredients
1 (15 ounce) can black beans drained and rinsed
2 large eggs
1/4 cup cocoa powder
2/3 cup honey (I like to split 50/50 honey and syrup for a different flavor)
1/3 cup coconut oil
1/2 tsp baking powder
pinch of salt
3/4 cup mini dark chocolate chips (divided)
*optional 3-5 scoops USANA chocolate protein powder
*optional 2-4 drops peppermint essential oil
Try adding peanut butter, or PBFit for chocolate peanut butter flavor
Preparation
Step 1
Preheat oven to 350 degrees
Step 2
Place all ingredients, except chocolate chips, in blender or food processor and blend until smooth.
Step 3
Pour batter into a large bowl and stir in 1/2 cup chips
Step 4
Pour batter into greased 8X8 inch pan and top with 1/4 cup chocolate chips
Bake 30-35 mins or until toothpick comes out clean
